Hearty Pork and Beer Stew

- 2 lbs1 kgCanadian Pork Braising Cubes
- 2 Tbsp25 mLcanola oil
- 11large onion, coarsely chopped
- 22cloves garlic, minced
- 1/4 cup50 mLall purpose flour
- 1/2 tsp2 mLEACH pepper, ground allspice
- 12 oz355 mLbottle dark beer or ale
- 2 cups500 mLreduced sodium beef broth
- 2 Tbsp25 mLred wine vinegar
- 11bay leaf
- 22carrots, peeled and thickly sliced
- 44potatoes, scrubbed and cut in large cubes
Directions
In a Dutch oven, heat oil over medium-high heat. Add pork cubes and cook and stir until lightly browned. Add onion and garlic; cook and stir until onion is tender but not browned. Add flour, seasonings, beer, broth, red wine vinegar and bay leaf. Bring to a boil; reduce heat. Cover and simmer 45 minutes or until pork is very tender. Add potatoes and carrots; cover and simmer 30 minutes more or until vegetables are tender. Adjust seasoning.
