      Canadian Pork Leg Inside, Scallopini or Schnitzel (4 slices)
    • 1/2

      onion, coarsely chopped
    • 1 cup
      250 mL
      vegetable broth
    • 4 tsp
      20 mL
      cornstarch
    • 1/2 cup
      125 mL
      peeled and coarsely chopped fresh peaches (or canned peaches, packed in juice,drained)
    • 2 Tbsp
      25 mL
      peach jam
    • 2 tsp
      10 mL
      curry powder
    • 3/4 tsp
      3 mL
      ground ginger
    • 1/4 tsp
      1 mL
      salt

Directions

Place each pork slice between sheets of waxed paper and, using a mallet or rolling pin, pound lightly. In nonstick or lightly oiled skillet over medium heat, sauté pork with onions, until pork is golden brown on both sides, about 8 minutes. Reduce heat to low. In medium bowl, blend vegetable broth and cornstarch; stir in remaining ingredients and pour mixture over pork. Cook and stir gently until sauce thickens, about 5 minutes.
