Chunky Pork Chili

- 3 lbs1.5 kgCanadian Pork Braising Cubes
- 2 Tbsp25 mLcanola oil
- 22large onions, chopped
- 22green peppers, chopped
- 33cloves garlic, minced
- 28 oz796 mLcan diced tomatoes with juice
- 1/3 cup75 mLchili powder
- 11jalapeno pepper, chopped (optional)
- 1 Tbsp15 mLground cumin
- salt and pepper to taste
- 19 oz398 mLblack beans, drained and rinsed
- 1/2 cup125 mLDry red wine
Directions
If pork cubes are very large, cut into 1″/2.5 cm cubes. Heat oil in large Dutch oven over medium-high heat. Add onions, green peppers and garlic; saute until tender, about 12-15 minutes. Transfer vegetables to plate. Add pork cubes to Dutch oven. Cook over medium-high heat until no longer pink, stirring often, about 10 minutes. Return vegetables to Dutch oven. Add tomatoes with juice, chili powder, jalapeno, cumin, salt and pepper. Cover and simmer until almost tender, about 1-1ΒΌ hours, stirring occasionally. Add black beans and red wine. Simmer uncovered until meat is tender and mixture thickens, about 30 minutes. Serve in bowls, topped with about 1 Tbsp/15 mL each of grated Cheddar cheese, chopped red onions and light sour cream if desired.
