      1.5 kg
      Canadian Pork Rib Roast or Rack of Pork
    • 3 Tbsp
      50 mL
    • 1 Tbsp
      15 mL
      garlic powder
    • 2 tsp
      10 mL
      EACH dried oregano and thyme
    • 1/2 tsp
      2 mL
      EACH salt, white pepper, cumin and cayenne
    • 1/4 tsp
      1 mL


Place pork roast in a shallow pan. Combine all seasonings and rub well over all surfaces of roast. Roast pork at 325°F (160°C) for about 1 3/4 hours or until meat thermometer registers 155-160°F (68-71°C). Remove from oven; cover with foil and let stand 10 minutes before slicing. Serve with red and green peppers and okra.

For more intense flavour, place pork roast in a shallow dish; rub with seasonings; cover and refrigerate several hours or overnight.
