- 1 lb500 gCanadian Pork Leg Inside, Scallopini or Schnitzel
- 11egg
- 1 Tbsp15 mLwater
- 2 cups500 mLbread crumbs
- 1 tsp5 mLdried thyme, crumbled
- 1/2 tsp2 mLsalt
- 1/4 tsp1 mLpepper
- 1/4 cup50 mLall purpose flour
- 2 Tbsp25 mLEACH canola oil, butter
- lemon wedges
Directions
Beat egg with water. Combine bread crumbs with thyme, salt and pepper. One by one, dredge pork slices with flour; dip in egg/water mixture and then into bread crumb mixture.Heat oil in large frypan over medium-high heat. When hot, add butter. Sauté pork slices until golden brown on both sides, about 8 minutes. Cook in batches, adding more oil and butter, if necessary. Do not crowd meat. Serve with lemon wedges.
