Pasta with Pork, Vegetables and Pesto

- 1 lb450 gCanadian Pork Strips
- 11 oz320 gpasta shapes, dry (any type)
- 2 Tbsp25 mLcanola oil
- salt and pepper
- 4 cups1 Lfrozen mixed vegetables (i.e. Italian-style mix)
- 3 Tbsp45 mLbasil pesto sauce
- Parmesan cheese
Directions
Cook pasta as directed on package. Heat oil in a large skillet over high heat. Brown pork 3 - 4 minutes. Season with salt and pepper to taste. Add vegetables and continue cooking 4 - 5 minutes. Add pesto and pasta; stir well to heat thoroughly. Serve immediately with freshly grated Parmesan cheese.
Note: Try this recipe with sun-dried tomato pesto, instead of the traditional pesto.
