Braised Side Ribs with Pineapple

- 2 lbs1 kgCanadian Pork Side Ribs
- 1 Tbsp15 mLcanola oil
- 22medium onions, chopped
- 1 Tbsp15 mLchopped garlic
- 2 cups500 mLbeef stock
- 2 cups500 mLchopped pineapple, fresh or canned
- 1 Tbsp15 mLhoney
- 1 Tbsp15 mLWorcestershire sauce
- 1 tsp5 mLred pepper flakes
- 1 Tbsp15 mLcornstarch
- 3 Tbsp45 mLchopped fresh cilantro, optional
Directions
Cut rib racks into four portions. In a large saucepan, heat oil over medium-high heat. Brown ribs in batches. Remove ribs and keep warm. Add onions and garlic to pan and cook until onions soften. Add beef stock, pineapple, honey, Worcestershire sauce, and pepper flakes. Bring to a simmer and add ribs. Allow to simmer uncovered for about 1-1/4 hours, or until meat is tender. Add more liquid if necessary. Remove ribs and thicken sauce with cornstarch mixed with 1 Tbsp/15 mL cold water. Serve ribs over steamed rice, topped with sauce and sprinkled with chopped cilantro.
