Purchase a Crown Roast "ready to cook" from the meat counter or ask the butcher to tie a roast to suit your needs. | |
Small Under 3 kg (7 lbs) | Fill cavity with stuffing. Roast uncovered at 325°F (160°C) for 2 to 2 1/2 hours or until meat thermometer registers 160°F (71.1°C). |
Medium 3 to 4 kg (7 to 9 lbs) | Fill cavity with foil ball and roast, uncovered at 325°F (160°C) for 1 1/2 hours. Remove from oven. Drain off excess fat. Remove foil ball. Fill cavity with stuffing. Roast for another 1 1/2 hours or until meat thermometer registers 160°F (70°C). |
Large Over 4.5 kg (10 lbs) | Fill cavity with foil ball and roast, uncovered at 325°F (160°C) for 11/2 hours. Remove from oven. Drain excess fat. Remove foil ball. Fill cavity with stuffing. Roast for another 2 to 2 1/2 hours or until meat thermometer registers 160°F (71.1°C). |
To serve, remove roast from oven and let stand for 15 minutes before carving. Place a paper frill on each rib. |
