Ingredients
2 racks Canadian Pork side ribs (2 lbs)
1 Tbsp (15 mL) vegetable oil
2 medium onions, chopped
1 Tbsp (15 mL) chopped garlic
2 cups (500 mL) beef stock
2 cups (500 mL) chopped pineapple, fresh or canned
1 Tbsp (15 mL) honey
1 Tbsp (15 mL) Worcestershire sauce
1 tsp red pepper flakes
1 Tbsp (15 mL) corn starch
3 Tbsp (50 mL) chopped fresh cilantro - optional
Cooking Instructions
Cut rib racks into four portions.
In a large saucepan, heat oil over medium-high heat. Brown ribs in batches. Remove ribs and keep warm. Add onions and garlic to pan and cook until onions soften. Add beef broth, pineapple chunks, honey, Worcestershire sauce, and pepper flakes. Bring to a simmer and add ribs. Allow to simmer uncovered for about 1-1/4 hours, or until meat is tender. Add more liquid if necessary. Remove ribs and thicken sauce with cornstarch mixed with 1 tablespoon cold water.
Serve ribs over steamed rice, topped with sauce and sprinkled with chopped cilantro.
