      Canadian Pork Strips
    • 10 oz

      can reduced sodium chicken or vegetable broth
    • 1 Tbsp
      15 mL
      curry paste (red or green)
    • 14 oz
      398 mL
      can "light" coconut milk
    • 1/3 cup
      75 mL
      water
    • 1 tsp
      5 mL
      EACH ground coriander and salt

      medium red onion, diced
    • 1 1/2 cups
      375 mL
      uncooked converted rice
    • 1

      lime
    • 1/2 cup
      125 mL
      chopped fresh basil or coriander (optional)

Directions

Place pork strips, broth and curry paste into slow cooker and stir to mix. Stir in coconut milk, water, ground coriander and salt along with peppers, onion and rice. Cover and cook until rice is tender, 2-3 hours on high or 4-5 hours on low. Stir in juice from 1/2 lime; cut other half into wedges to serve with rice. Garnish with chopped basil or coriander, if desired.
