      coooked cubed Canadian Pork
    • 14 oz

      can red kidney beans, rinsed and drained
    • 1 cup
      250 mL
      canned kernel corn, drained (or frozen, thawed)

      red pepper, chopped
    • 1/2 cup

      sliced celery

      green onions, chopped
    • 1 Tbsp
      15 mL
      chopped fresh parsley (or 1 tsp/ 5 mL dried)
    • 1/4 cup
      50 mL
      red wine vinegar
    • 1 Tbsp
      15 mL
      canola oil

      love garlic, minced
    • 1/4 tsp
      1 mL
      salt
    • pinch
      pinch
      freshly ground pepper
    • dash
      dash
      hot pepper sauce

Directions

In bowl, gently toss together beans, corn, carrot, red pepper, celery, onions, parsley and pork. In separate small bowl, whisk together dressing ingredients. Pour over salad and toss gently to combine. Chill for 30 – 60 minutes, occasionally stirring lightly.
