      fresh Canadian Pork Tails (about 10 oz/300 g)
    • 1 cup
      250 mL
      tomato sauce
    • 1/4 cup
      50 mL
      maple syrup or brown sugar
    • 1/4 cup
      50 mL
      tomato paste
    • 2 Tbsp
      25 mL
      red wine vinegar
    • 2 Tbsp
      25 mL
      canola oil
    • 2 tsp
      10 mL
      minced garlic
    • 1 tsp
      5 mL
      dry mustard
    • Juice of one lemon
    • 2 tsp
      10 mL
      coarse black pepper
    • 1 tsp
      5 mL
      salt

Directions

Place tails on a rack in a roasting pan; roast at 350ºF (180ºC) for 2 hours, or until meat is tender and most fat has melted away. Turn tails occasionally. Combine all other ingredients to make a basting sauce. Return tails to oven and brush tails frequently with sauce for about 30 minutes. OR while tails are roasting in oven, preheat barbecue on high; reduce heat to medium-high. Grill tails on lightly oiled grill over medium-high heat until crisp, basting throughout.
