Rib Roast With Rosemary, Sesame, and Garlic

- 3 lb1.5 kgCanadian Pork Rib Roast
- 2 Tbsp25 mLchopped fresh rosemary
- 1 Tbsp15 mLchopped garlic
- 1 Tbsp15 mLbrown sugar
- 1 Tbsp15 mLsesame seeds
- 1 tsp5 mLcoarse black pepper
Directions
Combine all ingredients (except the pork) and rub this mixture all over the pork. Place pork in a roasting tray and roast at 325ºF (160ºC) until a meat thermometer registers 155-160ºF (68-71ºC), about 1 1/4 to 1 1/2 hours. Remove from oven; cover loosely and let rest for 10 to 15 minutes. A boneless roast will take approximately one hour. A bone-in roast will take about 30 minutes longer to cook to temperature.
