Pork and Apricot Salad

    • 2 cups
      500 mL
      cooked Canadian Pork Loin, cut in 1/2"/1.25 cm cubes
    • 14 oz
      398 mL
      can apricot halves, in juice
    • 2 cups
      500 mL
      blanched broccoli florets
    • 1 cup
      250 mL
      sliced celery
    • 2 tsp
      2 mL
      ground ginger
    • dash white pepper


Place pork in a large bowl. Drain apricots, reserving 1/2 cup (125 mL) syrup; add to pork along with broccoli and celery. Combine reserved apricot syrup with ginger and pepper and pour over pork mixture, tossing lightly to coat. Cover and refrigerate overnight. Serve chilled.
