- Canadian Pork Loin Cutlets, delicated
- panini or mini-baguettes
- baby arugula
- apple, thinly sliced
- sharp cheese, sliced
- canola oil
- salt and freshly ground pepper to taste
Slice bread in half lengthwise. Open and garnish 4 bottom slices with arugula, apple slices and cheese. Heat oil in a nonstick pan over high heat. Quickly cook cutlets, 1 - 2 minutes per side, depending on thickness. Add pork to breads. Sprinkle with paprika; season with salt and pepper. Cover with top bread slices. Heat a large grill pan on medium-high heat. Arrange sandwiches in pan. Brown each side, flattening them with a spatula. Serve immediately.
