      cold cooked rice

      can small shrimp, drained and rinsed
    • 1/4 cup

      frozen peas
    • 1/4 cup
      50 mL
      chopped cucumber
    • 2 tbsp
      25 mL
      chopped peanuts

Directions

Heat 1/2 tsp/2 mL canola oil in a small skillet over medium-high heat. Add egg and cook until set. Remove and cut egg into strips. Set aside. Heat remaining 2 tsp/10 mL oil in wok or frypan over medium-high heat. Add pork strips and brown. Reduce heat to medium; add onions, garlic and sambal oelek and stir-fry for 1 or 2 minutes. Add red pepper, rice, shrimp and peas. Stir-fry until heated through. Serve with toppings of egg strips, cucumber and peanuts.
