      EACH large green and red pepper, in julienne strips

      medium Spanish onion, in julienne strips

      large flour tortillas
    • Toppings: shredded Cheddar or Monterey Jack cheese, shredded lettuce, sour cream, guacamole, salsa, chopped green onions or chopped cilantro.

Directions

Combine pork with oil, lime juice and rind, garlic and spices. Marinate for one hour, refrigerated. In a large skillet or wok over medium-high heat, stir-fry pork strips with marinade in wok or frypan for about 2 minutes. Add vegetables; cook until vegetables are just tender. Meanwhile, wrap tortillas and warm in microwave. Transfer pork mixture to heated platter to serve with warm tortillas and a selection of toppings.
