      can mild green chilies, rinsed, drained, chopped

      EACH cayenne and pepper

      can crushed plum tomatoes

      cans (19 oz/540 mL each) kidney beans, rinsed and drained

Directions

Toss pork cubes with flour to coat. Heat oil over medium heat. Brown pork in batches. Remove pork; set aside. Drain all but 1 Tbsp/15 mL fat from pan. Add onions and garlic; cook gently until tender, about 5 minutes. Add pork cubes, chilies, chili powder, cumin, oregano, cayenne, pepper, tomatoes and water. Stir and bring to a boil. Reduce heat; cover and simmer 2 – 2 ½ hours until meat is very tender and mixture is thick. Stir in beans and heat thoroughly. If necessary, heat uncovered to thicken further. Serve over rice or in flour tortillas topped with chopped green onions and grated Cheddar cheese, if desired.
