      Canadian Pork Strips

      canola oil,divided

      EACH coriander, cumin, tumeric

      EACH salt, red pepper flakes, fennel seeds

      minced fresh ginger

      red apple, cored and cubed
    • 1/2 cup
      125 mL
      chicken broth
    • 6 oz

      steamed chow mein noodles
    • 1/2 cup
      125 mL
      plain yogurt
    • 2 tsp
      10 mL
      honey
    • 2 tsp
      10 mL
      all purpose flour
    • 1/4 cup
      50 mL
      chopped fresh coriander or parsley
    • 2 Tbsp
      25 mL
      EACH peanuts and raisins

Directions

Heat 2 tsp/10 mL oil in a large nonstick skillet over high heat. Add pork strips and brown on all sides. Remove from skillet. Reduce heat to medium-low. Add remaining 1 tsp (5 mL) oil to skillet. Add dry spices. Cook and stir for 1 minute. Add onion, garlic and ginger; cook and stir 5 minutes. Add apple; cook and stir often, for 5 minutes. Add chicken broth; bring to a boil. Reduce heat; add pork. Cover and simmer about 3 minutes. Meanwhile, cook noodles in boiling water for 2 minutes; drain. Combine yogurt and honey. Sprinkle with flour; mix well. Add to pork mixture with noodles. Sprinkle with chopped coriander and peanuts.
