      Canadian Pork Loin Roast, boneless
    • 2 Tbsp
      25 mL
      onion powder
    • 2 tsp
      10 mL
      EACH thyme, salt and brown sugar
    • 1 tsp
      5 mL
      EACH allspice, pepper and red pepper flakes
    • 1/2 tsp
      2 mL
      EACH ground cinnamon and nutmeg


Place pork in a small roasting pan. Blend seasonings together; coat roast thickly but evenly. Roast uncovered at 325°F (160°C) until meat thermometer registers 155-160°F (68-71°C), about 1-1/2 hours. Remove from oven; cover loosely and let rest 10 minutes before slicing. Slice and serve or make into Spicy Jerk Roll-ups.

Spicy Jerk Roll-ups: Mix 4 oz/125g low-fat cream cheese with 1 chopped green onion and 1 tsp/5 mL chili powder. Spread on each of 8 flour tortillas; top with lettuce, tomatoes and slices or strips of Caribbean Jerk Pork Roast. Roll up and serve.
