- 3 lb1.5 kgCanadian Pork Loin Roast, boneless
- 2 Tbsp25 mLonion powder
- 2 tsp10 mLEACH thyme, salt and brown sugar
- 1 tsp5 mLEACH allspice, pepper and red pepper flakes
- 1/2 tsp2 mLEACH ground cinnamon and nutmeg
Place pork in a small roasting pan. Blend seasonings together; coat roast thickly but evenly. Roast uncovered at 325°F (160°C) until meat thermometer registers 155-160°F (68-71°C), about 1-1/2 hours. Remove from oven; cover loosely and let rest 10 minutes before slicing. Slice and serve or make into Spicy Jerk Roll-ups.
Spicy Jerk Roll-ups: Mix 4 oz/125g low-fat cream cheese with 1 chopped green onion and 1 tsp/5 mL chili powder. Spread on each of 8 flour tortillas; top with lettuce, tomatoes and slices or strips of Caribbean Jerk Pork Roast. Roll up and serve.
