      EACH salt, onion powder, garlic powder and cayenne pepper
    • 11/2 tsp
      7 mL
      white pepper
    • 1/2 tsp
      2 mL
      black pepper
    • 1 tsp
      5 mL
      EACH dried thyme leaves, oregano leaves


Lift and peel the skin from the back of each rack of ribs. Cut each strip in half (about 6 rib portions). In a small jar with a tight-fitting lid or a plastic bag, shake together remaining ingredients. Rub mixture on all surfaces of ribs. Preheat barbecue on high; reduce heat to medium. Turn off one side of barbecue. Place ribs on lightly oiled grill over indirect heat (“off” heat side). Close barbecue cover and grill 14 to 16 minutes per side or until tender, turning every 15 minutes.
