Bratwurst Potato Salad

    • 1 lb
      500 g
      Bratwurst, Octoberfest, or your favorite Canadian Pork Sausage
    • 7
      large potatoes, scrubbed and cooked
    • 1
      large onion, thinly sliced
    • 1/4 cup
      50 mL
      cider vinegar
    • 1/4 cup
      50 mL
      canola oil
    • salt and ground black pepper


In a large skillet, over medium heat, cook sausage 10 to 12 minutes until browned and cooked through; drain; keep warm. Peel warm potatoes and, if desired, slice. In a large serving bowl, mix warm potatoes and onion. Slice the sausage into bite-size pieces; add to potatoes. Add vinegar and oil; mix and add salt and pepper, to taste. Serve warm or cold with carrot and celery sticks or a green salad.

Note: Fresh sausage should always be cooked to well done
